so i gotta be honest, this recipe has been lifted right from a restaurant i used to work at, with some minor modifications. i would eat this soup every single day i worked there and never got sick of it. i try to keep it simple and not add a lot of spices, usually just salt and pepper. you can also add bacon to the recipe, but it's already perfect as is. complete the experience with some soda bread and a nice pint of guinness or beamish.
ingredients
1 stick of butter (half is probably fine but the original recipe calls for one whole stick)
4 leeks (chopped)
potatoes (however many you feel is appropriate. i look a lot of stuff in my soup, personally)
water/broth (approx. 10 cups, depends)
4 cups heavy cream
optional ingredients:
chopped scallions
shredded cheese (colby-jack or personal preference)
add butter and chopped leeks to pot and cook until leeks are soft. then add the potatoes, salt and water or broth and bring to a boil. vegetable broth is recommended to add more flavor to the potatoes. cook for about 25-30 minutes or until potatoes are soft. let the soup cool in the fridge for about 45 minutes. reheat slowly and stir in heavy cream. soup should be mostly white and very creamy. i highly recommend adding pepper, scallions and shredded cheesy to your finished bowl of soup. and don't forget the soda bread and guinness!
