ingredients

5c water

3-4 tablespoons of miso

2 green onions, chopped

1 handful of mushrooms, sliced

1 daikon radish, sliced

1/2 cube of tofu, diced

Bring water to a boil with the daikon radish. Once it has boiled, reduce heat and add the green onions, mushrooms, and tofu. Bring back to a boil for a moment and then turn off the heat. Add the miso only after the boiling has ceased. Allow to simmer, stirring gently, for at least five minutes before serving.

Miso is fermented and colonized soybean paste. The bacteria that colonize it perform the function of providing protein and clarifying nutrients. They also serve to eat and/or poison unfriendly bacteria in your digestive system and colonize your intenstine, thus helping you to digest and assimilate nutrients with greater ease.
